How many portfolio items should I include in the ItemList?

Include every transformation you want AI to know about. There is no practical limit. More items give AI a broader picture of your capabilities — if you do color, cuts, facials, nail art, and bridal work, show examples of all of them so AI can match you to a wider range of queries.

Should I tag which stylist or technician did each portfolio piece?

If you want AI to connect specific work to specific team members, add an author field on the CreativeWork referencing a Person node. This is especially useful for salons where clients book specific stylists — AI can then recommend both the salon and the individual artist behind the work.
